At the heart of the evening is Daniel Solway, Sante’s beverage director, whose approach to wine pairing mirrors our philosophy in the kitchen. From vibrant natural wines to elegant cocktails, Daniel’s selections are thoughtful extensions of the menu, drawing out its spice, depth, and seasonality.
